¼ onion, chopped
½ cup sliced green olives
¼ bell pepper, chopped
1 tbsp italian seasoning
1 can sliced mushrooms, drained
1 cup diced pepperoni
4 russet potatoes, diced
1 ¾ cups pizza sauce
1 can diced tomatoes, NOT drained
200 g shredded mozzarella cheeese

- Preheat oven to 350 degrees
- Combine all ingredients except mozzarella cheese
- Cover with foil and bake for 1 hour 30 minutes, stirring half way
- Uncover, top with mozzarella
- Bake an additional 15 minutes
- Let cool for 5 minutes and serve
